🍓 Champagne Panna Cotta with Macerated Strawberries & Basil Crème
🎾 Inspired by Wimbledon’s iconic strawberries and cream, this elevated dessert adds sparkling sophistication with champagne, garden-fresh basil, and silky panna cotta — ideal for alfresco entertaining in style.
🧾 Ingredients (Serves 6)
For the Champagne Panna Cotta:

500ml heavy cream

100ml whole milk

100ml dry champagne or prosecco

75g caster sugar

2 tsp vanilla bean paste

3 sheets gold-leaf gelatin (or 7g powdered gelatin)
For the Macerated Strawberries:

300g fresh strawberries, halved or quartered

2 tbsp fine caster sugar

Zest of ½ lemon
-
1 tbsp champagne (optional)

Fresh cracked black pepper (just a touch)
For the Basil Crème:

100ml crème fraîche

1 tbsp icing sugar
-
1 tbsp finely chopped fresh basil

½ tsp lemon juice

1. Make the Panna Cotta

Soak gelatin sheets in cold water until softened (5–10 minutes).

In a saucepan, gently heat the cream, milk, sugar, and vanilla until just simmering.

Remove from heat. Squeeze excess water from the gelatin and stir it into the hot cream until dissolved.

Cool slightly, then stir in the champagne.

Pour into elegant glass coupes or ramekins. Chill for at least 4 hours, preferably overnight.
2. Prepare the Macerated Strawberries

Mix strawberries, sugar, lemon zest, and champagne (if using) in a bowl.

Cover and refrigerate for at least 30 minutes. Just before serving, add a light grind of black pepper for depth.
3. Whip the Basil Crème

Mix crème fraîche with icing sugar, basil, and lemon juice.

Chill until ready to serve.
